Recipe: Barbecue Salmon with Maple Almond Crust
A quick, easy and healthy summer barbecue recipe

Yield: 8
- 1-1/2 lbs of Salmon fillet
- 1/2 cup almonds, crushed, unsalted
- 3 tbsp pure maple syrup
- 3 tbsp apple juice
Cooking Directions
Take a large piece of aluminum foil and place the salmon skin side down. Crumble the almonds overtop of the salmon. Add the maple syrup and apple juice over the salmon.
Fold up the edges of the foil and create a tent over the salmon with the edges. Ensure that the foil is sealed well. You may need to use more than one sheet of foil.
Place on the hot barbecue, not in direct heat/flame. Cooking time can vary, but salmon is fairly forgiving, so check on it every few minutes until the centre is tender and not pink. It usually takes about 5-7 minutes of cooking time for every inch of thickness. The maple syrup and apple juice keep it moist.
