A former marine engineer turned winemaker, Paul Gardner spent 11 years excavating a cellar the size of a maritime drydock from solid rock to accommodate a winery with perfect storage temperatures. The aircraft-hanger style glass doors at the front enable winery visitors to peer into the cellar or, if they are inside, to look out over the vineyards. Gardner enjoys making small lots of interesting wine. New for 2012 is a ruby-style, port-style wine made from zinfandel grapes. (John Schreiner)
