Recipe: Apple Cake with Coffee Glaze

Ingredients
Apple Cake
- 4 cup grated apples (peeled)
- 1/2 cup margarine
- 2 cup sugar
- 2 cup flour
- 1 tbsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp allspice
- 2 tsp baking soda
- 1/2 tsp salt
- 3 eggs
- 1 tsp vanilla
- 1/2 cup choppd walnuts or pecans (optional)
Coffee Glaze
- 4 tbsp butter
- 1/4 cup brown suagr, loosely packed
- 1/4 cup milk
- 1 tsp vanilla
- 1 tsp instant coffee
- 1 1/2 cup confectioner's sugar, sifted
This Betty Held classic recipe is one of the dessert choices on our group menu. As such, it's one of the most requested recipes we have.
For apple cake:
Preheat oven to 350 degrees. Spray, or grease, and flour a 9” x 13” cake pan.
Cream margarine and sugar together in mixing bowl. Add eggs, one at time until well blended. Add vanilla. Sift dry ingredients together and add to wet mix. Mix until well-blended. Add apples, mix well. Stir in nuts by hand.
Pour batter in cake pan and bake for 45 minutes. Let cool completely before cutting.
For coffee glaze:
In a saucepan melt butter over medium heat, add brown sugar, milk and instant coffee, stirring constantly until sugar and coffee are dissolved and mixture bubbles at the edge. Remove pan from heat and whisk in confectioner’s sugar until icing is smooth. Drizzle over cooled cake.
