Recipe: Canuckle Sandwich
Hat Trick white by NHL Alumni Wines pairs well with this Canadian sandwich
Ingredients
Canuckle Sandwich
- 1 lb whole peameal-style pork loin (450 g)
- 1/4 cup good quality prepared barbecue sauce (60 mL)
- 1/4 cup dijon mustard (60 mL)
- 2 tbsp maple syrup (30 mL)
- 8 dinner rolls
- 1/2 lb medium Cheddar cheese, sliced
Preheat your oven to 325 F (160 C) and line a roasting pan with parchment paper or foil.
Pat the peameal dry with paper towel to remove excess moisture and roast for 35-40 minutes until it reaches an internal temperature of 155 F (68 C). During the last 5 minutes of cooking, brush the tops and sides of the peameal with the barbecue sauce and allow the roast to rest for 5 minutes before slicing.
To serve, stir the mustard and maple syrup and spread this onto the sliced dinner rolls. Add the Cheddar cheese and desired toppings and enjoy.

Cook time: 40 minutes
