Recipe: Plum, Apple & Mint Upside Down Tart
A harvest-time dessert from Peller Estates
Ingredients
Plum, Apple & Mint Upside Down Tart
- 8 tbsp caramel
- 2 whole apples
- 4 whole black plum (segmented)
- 1/4 cup white sugar
- 2 tbsp roughly chopped mint
- 1 whole vanilla bean
- 4 6 inch puff pastry rounds
Pour hot caramel evenly into four five-inch round pans and allow to cool. In a bowl mix the apples, plums, and sugar, mint and vanilla seeds. Place the fruit evenly on the cold caramel in the four pans and cover with the puff pastry. Chill and store. When ready to serve place in a 425F oven for approx 10 to 15 minutes. Once baked, turn over onto the plate and serve.
