Recipe: Shrimp and Rice Bake
A savoury casserole inspired by Southern cooking
Ingredients
Shrimp and Rice Bake
- 1 lb fresh or frozen shrimp, cooked, cleaned, and shelled
- 1 cup long-grain rice, uncooked
- 1/4 cup butter
- 1/4 cup parsley, chopped
- 1/4 cup green onion, chopped
- 1 clove garlic, crushed
- 8 oz clam juice
- 2 cup water
- 2 tsp chicken base, or bouillon cubes
- 1/4 cup pecan halves
Makes: 4 to 6 servings
Prep time: 10 minutes
Cook time: 1 hour
Total time: 1 hour, 10 minutes
Shrimp and Rice Bake Cooking Directions
In a large heavy skillet, heat butter over medium-low heat. Add rice and brown lightly. Add parsley, onion, and garlic. In a saucepan, heat clam juice, water, and chicken base. Add hot liquid to rice mixture; transfer to a 1 1/2-quart casserole.
Cover and bake at 350° for 45 minutes. Add shrimp and pecans; cover and bake 15 minutes longer.
