Cave Spring delivers an archetypical example here. This is one of the better examples of the otherwise soft 2010 Ontario rieslings. It has bright lemon-lime and lemon-blossom aromas and solid minerality on the palate. It is off-dry, but balanced by crisp acidity, with very good length.
